“Nectar thick” is the older US name for IDDSI Level 2: Mildly Thick. It pours like a fruit nectar, is sippable but takes effort through a standard straw, and tests at 4–8 mL remaining in the 10 mL syringe flow test after 10 seconds.

Natural nectars vary widely by brand and temperature, so “it looks like nectar” is not a safe judgment. Use the syringe test on each batch.

Cold drinks often thicken in the refrigerator. Re-test at the temperature it will actually be served.
