## Preparation and serving notes

Xanthan gum powder: add powder to the empty cup first, pour liquid over it, and stir briskly 20–30 seconds; most beverages reach target consistency within 5 minutes. Per 6 fl oz, the manufacturer chart gives 1.5 scoops = Level 2, 3 scoops = Level 3, 4.5 scoops = Level 4. Verify each batch with the syringe test.


Clear and flavor-neutral; maintains viscosity in the presence of salivary amylase and does not over-thicken over time. Prepared drinks may be covered and chilled up to 24 hours.
