Level 5: Minced & Moist | 30 min | Serves 1 + the family

## Family version

- Seasoned beef
- Rice
- Lettuce and salsa
- Tortilla chips

## Level 5 ingredients

- 140 g finely ground beef, cooked tender
- 100 g smooth refried beans
- 80 g mashed ripe avocado
- 120 ml thick smooth tomato sauce
- 2 tbsp sour cream

## Method

1. Cook the beef gently with mild taco seasoning, breaking it down until tender with no browned hard bits.
2. Process or mince the beef to 4 mm or smaller, then bind it with the thick tomato sauce.
3. Warm the refried beans and thin only enough to remain soft, cohesive, and free of skins or lumps.
4. Mash avocado smooth and plate it with the beef and beans; keep sour cream thick with no thin liquid separation.
5. Skip rice, corn, lettuce, raw onion, chips, and chunky salsa. Fork-pressure and spoon-tilt test the finished bowl.

## Equipment

Mini food processor, fork and spoon for testing

## Practical tip

A taco bowl keeps the flavor by using smooth beans, avocado, and sauce instead of crunchy toppings or scattered rice.

## Before serving

Run the appropriate IDDSI fork and spoon tests on the finished serving. Recipes guide the preparation; only testing confirms how the serving behaves.

## Safety

Use only the food and drink levels prescribed by the person's qualified clinician. Test the actual serving before it is eaten or drunk.
