# Real Chocolate Pudding: IDDSI Level 4 recipe

## Level 4 ingredients

- 500 ml whole milk
- 60 g sugar
- 30 g cornstarch
- 25 g cocoa powder
- 50 g dark chocolate, chopped
- Pinch of salt

## Method

1. Whisk sugar, cornstarch, cocoa, and salt in a saucepan; gradually whisk in milk until lump-free.
2. Cook over medium heat, whisking constantly, until thick: about 6–8 minutes after it starts to bubble.
3. Off the heat, stir in the chopped chocolate until melted and completely smooth.
4. Chill at least 2 hours. Pudding firms as it cools. Check the spoon tilt test cold, exactly as it will be served.
5. Serve plain or with a smooth fruit purée. Skip whipped cream toppings unless the SLP has cleared them, and never add shavings or cookie crumbles.

Homemade pudding is one of the easiest Level 4 desserts to get right, and the whole family will eat it, which is the point.
