## Level 3 ingredients

- 500 g pumpkin or butternut squash, peeled and cooked very soft
- 500 ml smooth low-sodium stock
- 120 ml cream
- Commercial thickener as needed

## Method

1. Blend the cooked pumpkin, stock, and cream until completely smooth, then pass the soup through a fine sieve.
2. Remove every seed, skin, herb, and fibrous strand. The finished soup must have no lumps or thin liquid separation.
3. Adjust with measured thickener or smooth liquid, following the product instructions and its required standing time.
4. At serving temperature, confirm Level 3 with the 10 mL flow test and fork drip test. Leave seeds, oil drizzle, and bread off this serving.

## Equipment

High-speed blender, fine sieve, 10 mL syringe and fork for testing

## Practical tip

Soup thickness changes as it cools. Test the portion at the temperature at which it will be served.
