Level 6: Soft & Bite-Sized | 25 min | Serves 1 + the family

## Family version

- Pan-seared salmon
- Steamed broccoli
- Rice pilaf

## Level 6 ingredients

- 140 g salmon fillet
- 100 g broccoli florets, steamed very soft
- 120 g well-cooked mashed-texture rice or soft polenta
- 2 tbsp lemon butter sauce

## Method

1. Poach or bake the salmon gently until it flakes: avoid searing, which creates a tough crust.
2. Steam broccoli past “crisp-tender” to genuinely soft; stems should squash under a fork.
3. Swap rice pilaf for soft polenta or well-moistened mashed potato. Plain rice scatters and is hard to control.
4. Cut everything to 1.5 cm pieces (about the width of an adult thumbnail).
5. Dress generously with lemon butter so every bite is moist. Fork-pressure test a piece of each component.
