# Maple Brown-Sugar Breakfast Oats: IDDSI Level 4 recipe

## Family version

- Steel-cut oats
- Brown sugar
- Toasted pecans
- Cream

## Level 4 ingredients

- 50 g rolled oats
- 250 ml whole milk
- 1 tbsp maple syrup
- Pinch of cinnamon

## Method

1. Simmer oats in milk until very soft, about 10 minutes.
2. Blend until completely smooth. No visible oat flecks.
3. Stir in maple syrup and cinnamon. The sweetener goes in after blending so you can adjust without re-blending.
4. Cool to eating temperature; check with the spoon tilt test. If it loosened, a teaspoon of commercial thickener brings it back.
5. Skip the pecans for the Level 4 plate. Toast them for the rest of the table.

## Practical tip

Oats thicken as they cool. Test at the temperature it will actually be eaten.
