Level 5: Minced & Moist | 15 min | Serves 2

## Family version

- Peaches and custard
- Cake
- Toasted nuts

## Level 5 ingredients

- 160 g canned peaches, drained and peeled
- 220 ml thick smooth custard
- Commercial thickener as needed

## Method

1. Drain and peel the peaches, then process them to uniformly soft pieces no larger than 4 mm.
2. Fold the peach into thick custard so the tiny pieces remain moist and bound together.
3. Check for any separated juice and confirm that the mixture slides from a tilted spoon without sticking.
4. Run the particle-size, fork pressure, and spoon tilt checks. Do not add cake, nuts, or crumbs.

## Equipment

Mini food processor, fork and spoon for testing

## Practical tip

Canned fruit is often softer than fresh, but each batch still needs a pressure test.

## Before serving

Run the appropriate IDDSI fork and spoon tests on the finished serving. Recipes guide the preparation; only testing confirms how the serving behaves.

## Safety

Use only the food and drink levels prescribed by the person's qualified clinician. Test the actual serving before it is eaten or drunk.
