Level 6: Soft & Bite-Sized | 30 min | Serves 2

## Family version

- Poached pears
- Mascarpone
- Toasted nuts
- Syrup

## Level 6 ingredients

- 2 ripe pears, peeled, cored, and poached very soft
- 120 g smooth mascarpone
- Thick smooth pear puree as needed

## Method

1. Poach the peeled pears until every part squashes completely under a fork and does not spring back.
2. Cut to pieces no larger than 1.5 cm and remove any firm center or fibrous section.
3. Serve with smooth mascarpone and enough thick pear puree to keep the pieces moist, with no syrup pooling.
4. Fork-pressure test several pear pieces. Leave nuts, brittle garnish, and thin syrup off this plate.

## Equipment

Small pot, fork for measuring and testing

## Practical tip

Test pieces from the widest part of the pear because they may cook more slowly than the edges.

## Before serving

Run the appropriate IDDSI fork and spoon tests on the finished serving. Recipes guide the preparation; only testing confirms how the serving behaves.

## Safety

Use only the food and drink levels prescribed by the person's qualified clinician. Test the actual serving before it is eaten or drunk.
