Level 4: Extremely Thick / Pureed | 25 min + chilling | Serves 4

## Family version

- Pumpkin pie
- Whipped cream
- Pastry crust
- Nutmeg

## Level 4 ingredients

- 300 g smooth pumpkin puree
- 350 ml whole milk
- 2 egg yolks
- 35 g cornstarch
- 50 g brown sugar
- 1 tsp pumpkin spice

## Method

1. Whisk pumpkin, milk, yolks, cornstarch, sugar, and spice until completely smooth.
2. Cook over medium-low heat, whisking constantly, until the custard thickens without curdling.
3. Press through a fine sieve while warm, then chill without toppings.
4. Stir gently and spoon-tilt test at serving temperature; it should hold shape but release easily and never feel firm or sticky.
5. Serve plain. Pie crust, nuts, cookie crumbs, and loose whipped topping are not part of the Level 4 serving.

## Equipment

Saucepan, whisk, fine sieve

## Practical tip

A chilled custard can become too firm; loosen with a small amount of milk and re-test before serving.

## Before serving

Run the appropriate IDDSI fork and spoon tests on the finished serving. Recipes guide the preparation; only testing confirms how the serving behaves.

## Safety

Use only the food and drink levels prescribed by the person's qualified clinician. Test the actual serving before it is eaten or drunk.
