Level 7: Easy to Chew / Regular | 3 hr | Serves 4

## Family version

- Beef casserole
- Potatoes
- Carrots
- Rich gravy

## Level 7 ingredients

- 600 g stewing beef
- 350 g peeled potatoes
- 250 g peeled carrots
- 500 ml thick smooth gravy

## Method

1. Cook the beef slowly until it falls apart with the side of a fork, then remove all gristle, fat, bones, and browned hard edges.
2. Cook peeled potatoes and carrots until they are soft throughout, with no firm centers or skins.
3. Keep every component moist with cohesive gravy and remove any thin liquid that separates.
4. Cut and pressure-test several pieces from the serving. Nothing should need a knife or spring back after pressing.

## Equipment

Covered casserole or slow cooker, fork for cutting and testing

## Practical tip

Tenderness varies within one pot. Test the exact meat and vegetables that go on the plate.

## Before serving

Run the appropriate IDDSI fork and spoon tests on the finished serving. Recipes guide the preparation; only testing confirms how the serving behaves.

## Safety

Use only the food and drink levels prescribed by the person's qualified clinician. Test the actual serving before it is eaten or drunk.
