Level 4: Extremely Thick / Pureed | 20 min | Serves 2

## Family version

- Poached pear
- Vanilla custard
- Toasted almonds

## Level 4 ingredients

- 2 ripe pears, peeled, cored, and poached very soft
- 180 ml thick smooth vanilla custard
- Commercial thickener as needed

## Method

1. Blend the peeled poached pears until completely smooth, then pass through a fine sieve.
2. Blend or whisk the pear puree with custard until uniform, with no juice separating around the edge.
3. Chill to serving temperature and check that it holds its shape but slides cleanly from a tilted spoon.
4. Confirm with the fork drip and spoon tilt tests. Leave nuts and pear pieces off this serving.

## Equipment

Blender, fine sieve, fork and spoon for testing

## Practical tip

Drain poached pears well before blending so their syrup does not create thin liquid pockets.

## Before serving

Run the appropriate IDDSI fork and spoon tests on the finished serving. Recipes guide the preparation; only testing confirms how the serving behaves.

## Safety

Use only the food and drink levels prescribed by the person's qualified clinician. Test the actual serving before it is eaten or drunk.
