The family’s version

  • Roast chicken
  • Mashed potatoes
  • Carrots
  • Pan gravy

The Level 4 version

  • 150 g tender chicken, skin and gristle removed
  • 130 g smooth mashed potatoes
  • 100 g carrots, cooked very soft
  • 240 ml thick smooth gravy
  1. Blend the chicken with warm gravy until completely smooth, then pass it through a fine sieve.
  2. Blend the carrots separately and keep the potatoes smooth, moist, and free of skins or lumps.
  3. Plate three distinct mounds. No thin gravy should leak or pool around them.
  4. Run the fork drip and spoon tilt tests on every component before serving.
