The Level 3 version
- 500 g pumpkin or butternut squash, peeled and cooked very soft
- 500 ml smooth low-sodium stock
- 120 ml cream
- Commercial thickener as needed
Convert it
- Blend the cooked pumpkin, stock, and cream until completely smooth, then pass the soup through a fine sieve.
- Remove every seed, skin, herb, and fibrous strand. The finished soup must have no lumps or thin liquid separation.
- Adjust with measured thickener or smooth liquid, following the product instructions and its required standing time.
- At serving temperature, confirm Level 3 with the 10 mL flow test and fork drip test. Leave seeds, oil drizzle, and bread off this serving.
