What IDDSI level are scrambled eggs?

Scrambled eggs do not have one automatic IDDSI level. It depends on how they are cooked and served. Soft, moist scrambled eggs in pieces no larger than 1.5 cm that squash easily under a fork can meet Level 6 Soft & Bite-Sized. Mashed to lumps no bigger than 4 mm and kept moist, with no liquid leaking out, they can meet Level 5 Minced & Moist. Blended until completely smooth, they can meet Level 4 Pureed. Each version has to pass the IDDSI test for that level.

IDDSI classifies food as it is actually served, not by its name. Eggs cooked slowly and taken off the heat while still soft behave very differently from eggs that have turned dry, rubbery, or browned.

For Level 6, cut the eggs into pieces no larger than 1.5 cm by 1.5 cm for adults. Press a piece with a fork until your thumbnail blanches white. It should squash and not spring back.

For Level 5, IDDSI describes food that is soft and moist with no liquid leaking or dripping from it, with lumps of about 4 mm that can be mashed easily with a little fork pressure. Watery eggs that weep liquid onto the plate do not meet that description.

For Level 4, the eggs must be smooth with no lumps, hold their shape on a spoon, fall off in a single spoonful when tilted, and not be sticky. IDDSI also lists crust or skin that forms on food during cooking or reheating as a texture to avoid at Levels 4, 5, and 6, so browned edges need to come off.
