Berry Swirl Yogurt Breakfast

4

Level 4Extremely Thick / Pureed · 10 min · serves 1

The family’s version

  • Greek yogurt
  • Berry compote
  • Granola
  • Honey drizzle

The Level 4 version

  • 170 g plain Greek yogurt (no inclusions)
  • 60 g berries
  • 1 tsp sugar
  • Commercial thickener if needed
  1. Simmer berries with sugar for 5 minutes, then blend completely smooth and pass through a fine sieve to remove every seed.
  2. Cool the purée; it should mound softly, not run. Thicken if any juice separates.
  3. Stir the yogurt and check for watery whey on top — drain it or stir back in until uniformly smooth and cohesive.
  4. Swirl the berry purée through the yogurt.
  5. Spoon tilt test the finished bowl. No granola, no whole berries, no honey drizzle that pools thin.
EquipmentSmall pot, blender, fine sieve
SLP tipThick Greek-style yogurt is the safer base — regular yogurts often test at Level 3, especially once stirred.

Before serving: run the spoon tilt and fork drip tests on the finished plate. Recipes guide you to a texture — only the test confirms it.
