- Chocolate custard
- Banana slices
- Cookie crumble
The Level 3 version
- 250 ml smooth chocolate custard
- 1/2 very ripe banana
- Milk or prescribed thickened milk as needed
- Commercial thickener as needed
Convert it
- Blend the custard and banana until completely smooth and free of fibers.
- Pass through a fine sieve, then adjust in small measured amounts if the mixture is too thick to flow.
- Check again after chilling because banana and custard both become thicker when cold.
- Confirm Level 3 with the 10 mL flow test and fork drip test. Serve without banana pieces or crumbs.
