The family’s version
- Salmon pasta
- Spinach
- Lemon
- Parmesan
The Level 6 version
- 160 g salmon, gently poached
- 180 g small pasta, cooked very soft
- 220 ml thick smooth cream sauce
- Finely grated parmesan
Convert it
- Check the poached salmon carefully for skin and bones, then divide it into pieces no larger than 1.5 cm.
- Cook the pasta past al dente and cut any larger shapes to no more than 1.5 cm.
- Fold salmon and pasta through thick cream sauce so every bite stays moist and cohesive. Leave spinach and lemon peel out.
- Fork-pressure test the pasta and the thickest salmon piece before serving.
