The family’s version

  • Salmon pasta
  • Spinach
  • Lemon
  • Parmesan

The Level 6 version

  • 160 g salmon, gently poached
  • 180 g small pasta, cooked very soft
  • 220 ml thick smooth cream sauce
  • Finely grated parmesan
  1. Check the poached salmon carefully for skin and bones, then divide it into pieces no larger than 1.5 cm.
  2. Cook the pasta past al dente and cut any larger shapes to no more than 1.5 cm.
  3. Fold salmon and pasta through thick cream sauce so every bite stays moist and cohesive. Leave spinach and lemon peel out.
  4. Fork-pressure test the pasta and the thickest salmon piece before serving.
