Maple Brown-Sugar Breakfast Oats

The family’s version
- Steel-cut oats
- Brown sugar
- Toasted pecans
- Cream
The Level 4 version
- 50 g rolled oats
- 250 ml whole milk
- 1 tbsp maple syrup
- Pinch of cinnamon
Convert it
- Simmer oats in milk until very soft, about 10 minutes.
- Blend until completely smooth. No visible oat flecks.
- Stir in maple syrup and cinnamon. The sweetener goes in after blending so you can adjust without re-blending.
- Cool to eating temperature; check with the spoon tilt test. If it loosened, a teaspoon of commercial thickener brings it back.
- Skip the pecans for the Level 4 plate. Toast them for the rest of the table.
