- Celery
- Pickles

The Level 5 version
- 140 g canned tuna, drained and checked for bones
- 180 g peeled potato, cooked very soft
- 120 ml thick smooth white sauce
- 2 tbsp smooth mayonnaise
Convert it
- Break the tuna and potato down to soft pieces no larger than 4 mm, using the gap between fork prongs as the measure.
- Remove every firm, dry, or stringy piece, then fold in white sauce and mayonnaise until the mixture is cohesive.
- Check that no liquid leaks out and that the food falls from a tilted spoon without sticking.
- Run the particle-size, fork pressure, and spoon tilt checks. Do not add celery, pickles, onion, or greens.
EquipmentMini food processor or fork, spoon and fork for testing
SLP tipTuna can become dry and flaky. Use enough thick sauce to keep every tiny piece bound together.
Before serving: run the fork pressure test on the finished plate. Recipes guide you to a texture. Only the test confirms it.
