The Level 6 version
- 2 ripe pears, peeled, cored, and poached very soft
- 120 g smooth mascarpone
- Thick smooth pear puree as needed
Convert it
- Poach the peeled pears until every part squashes completely under a fork and does not spring back.
- Cut to pieces no larger than 1.5 cm and remove any firm center or fibrous section.
- Serve with smooth mascarpone and enough thick pear puree to keep the pieces moist, with no syrup pooling.
- Fork-pressure test several pear pieces. Leave nuts, brittle garnish, and thin syrup off this plate.
