5
The family’s version
- Salmon and white fish
- Peas
- Cream sauce
- Mashed potato top
The Level 5 version
- 140 g poached salmon, bones and skin removed
- 100 g smooth mashed potatoes
- 70 g carrots, cooked very soft
- 180 ml thick cream sauce
Convert it
- Poach the salmon gently and check every flake carefully for bones and skin.
- Mash the fish to soft pieces no larger than 4 mm, then fold through enough thick cream sauce to bind it.
- Mash carrots to the same 4 mm size and omit peas, whose skins can remain difficult at Level 5.
- Top with moist mashed potato without creating a dry baked crust.
- Check piece size against the fork prongs and pressure-test fish and vegetables before serving.
EquipmentFork for measuring and testing
SLP tipFish is naturally soft, but it still needs sauce. Dry flakes can separate and scatter in the mouth.
Before serving: run the fork pressure test on the finished plate. Recipes guide you to a texture. Only the test confirms it.
