- Red lentil soup
- Carrot

The Level 4 version
- 180 g red lentils
- 250 g carrots, peeled and chopped
- 700 ml smooth low-sodium stock
- 2 tbsp cream or yogurt
- Commercial thickener as needed
Convert it
- Cook the lentils and carrots until they collapse easily, then blend with enough stock to become completely smooth.
- Pass through a fine sieve to remove skins or spice fragments, then stir in the cream or yogurt.
- The soup should hold a mound on a spoon without being sticky and without thin liquid separating.
- Confirm with the fork drip and spoon tilt tests. Serve without flatbread or garnish.
