- Beef stroganoff

The Level 6 version
- 450 g stewing beef, braised until fork-tender
- 180 g egg noodles, cooked very soft
- 300 ml thick smooth stroganoff sauce
- 120 g smooth mashed potato if needed
Convert it
- Braise the beef until it squashes completely under fork pressure; remove every piece of fat, gristle, and browned crust.
- Cut beef and very soft noodles to pieces no larger than 1.5 cm.
- Coat every piece in thick smooth sauce with no thin liquid pooling. Leave mushroom slices and parsley off this portion.
- Fork-pressure test the thickest piece of beef and a noodle. Both should squash and stay flat.

SLP tipIf even one beef piece resists the fork, use a more tender portion or convert that serving to Level 5.
