The family’s version

  • Beef stroganoff
  • Egg noodles
  • Mushrooms
  • Parsley

The Level 6 version

  • 450 g stewing beef, braised until fork-tender
  • 180 g egg noodles, cooked very soft
  • 300 ml thick smooth stroganoff sauce
  • 120 g smooth mashed potato if needed
  1. Braise the beef until it squashes completely under fork pressure; remove every piece of fat, gristle, and browned crust.
  2. Cut beef and very soft noodles to pieces no larger than 1.5 cm.
  3. Coat every piece in thick smooth sauce with no thin liquid pooling. Leave mushroom slices and parsley off this portion.
  4. Fork-pressure test the thickest piece of beef and a noodle. Both should squash and stay flat.
