The family’s version
- Breaded chicken parmesan
- Pasta
- Tomato sauce
- Melted cheese
The Level 6 version
- 280 g poached chicken thigh, skin removed
- 240 ml thick smooth tomato sauce
- 180 g soft polenta
- 40 g finely grated cheese melted into sauce
Convert it
- Poach chicken thigh until very tender. Remove skin, gristle, dry edges, and every trace of breading.
- Cut the chicken to pieces no larger than 1.5 cm and coat it generously in thick smooth tomato sauce.
- Serve with soft polenta and cheese melted smoothly into the sauce, without a chewy cheese crust.
- Fork-pressure test the thickest chicken piece. It must squash completely and not spring back.
