The family’s version

  • Poached pear
  • Vanilla custard
  • Toasted almonds

The Level 4 version

  • 2 ripe pears, peeled, cored, and poached very soft
  • 180 ml thick smooth vanilla custard
  • Commercial thickener as needed
  1. Blend the peeled poached pears until completely smooth, then pass through a fine sieve.
  2. Blend or whisk the pear puree with custard until uniform, with no juice separating around the edge.
  3. Chill to serving temperature and check that it holds its shape but slides cleanly from a tilted spoon.
  4. Confirm with the fork drip and spoon tilt tests. Leave nuts and pear pieces off this serving.
