The Level 7 version
- 8 eggs
- 120 ml milk
- 120 g peeled zucchini, cooked very soft
- 100 g roasted pepper, skin removed
- 60 g finely grated cheese
Convert it
- Cook the peeled vegetables until very soft, remove pepper skin, and chop them finely before adding them to the eggs.
- Bake gently without browning until just set and moist. Remove any dry or rubbery outer edge.
- Check that the frittata and every vegetable piece cut easily with the side of a fork.
- Fork-pressure test the serving. Serve without toast, raw salad, or crisp garnish.
