The Level 7 version

  • 8 eggs
  • 120 ml milk
  • 120 g peeled zucchini, cooked very soft
  • 100 g roasted pepper, skin removed
  • 60 g finely grated cheese
  1. Cook the peeled vegetables until very soft, remove pepper skin, and chop them finely before adding them to the eggs.
  2. Bake gently without browning until just set and moist. Remove any dry or rubbery outer edge.
  3. Check that the frittata and every vegetable piece cut easily with the side of a fork.
  4. Fork-pressure test the serving. Serve without toast, raw salad, or crisp garnish.
