The Level 7 version

  • 600 g stewing beef
  • 350 g peeled potatoes
  • 250 g peeled carrots
  • 500 ml thick smooth gravy
  1. Cook the beef slowly until it falls apart with the side of a fork, then remove all gristle, fat, bones, and browned hard edges.
  2. Cook peeled potatoes and carrots until they are soft throughout, with no firm centers or skins.
  3. Keep every component moist with cohesive gravy and remove any thin liquid that separates.
  4. Cut and pressure-test several pieces from the serving. Nothing should need a knife or spring back after pressing.
